The original recipe was made using chocolate flavored Oreo cookies and chocolate pudding. I however have a child that does not like chocolate and loves anything lemon. So all I did was change the flavor of the cookies and the pudding. The rest of the recipe stays the same.
No Bake Lemon Layer Dessert

36 Lemon flavor Oreo Cookies / not double stuff
6 tbsp. butter / melted
8 oz. cream cheese / softened
¼ cup sugar
2 3.9 oz. packages Lemon Instant Pudding
12 oz. tub Cool Whip
½ cup mini chocolate chips
3 ¼ cups cold milk / plus 2 tbsp. / divided
Place all the cookies in a large zip lock baggie and crush the cookies until there are no large pieces left. Dump the crushed cookies into a medium mixing bowl and add the 6 tbsp. of melted butter and mix well using a fork. Transfer the mixture it a 13×9 baking dish and press the crumbs into the pan to form the crust. Place in the fridge while making the cream cheese layer.
Cream Cheese Layer:
In a medium mixing bowl add the softened cream cheese, sugar and the 2 tbsp. of milk and mix until smooth. Mix in 1 ¼ cups of Cool Whip to the cream cheese mixture and stir until combined. Spread the cream cheese mixture over the crust and return to the fridge while making the pudding layer.
In a large bowl mix both boxes of Lemon pudding with 3 ¼ cups of milk with a whisk until the pudding thickens. Spread the pudding mixture over the cream cheese layer and return to the fridge for 4 hours.
Just before serving spread the remaining cool whip over the pudding layer and sprinkle the mini chocolate chips on top of the cool whip.
