I made this cake for a co-workers birthday. She is not a cake person but loves fruit. I actually made this at work and served it 10 minutes later. It was fun to see people reaction when you cut into what looks like a layer cake and it’s actually a piece of watermelon.
Fresh Fruit Watermelon Cake
Prep Time: 10 minutes Cook Time: 0 Serves: 10-12
1 red, seedless watermelon / Chilled
2 cups Vanilla Yogurt
1 8 oz. tub Cool Whip / Thawed
½ pint Raspberries
½ pint Blackberries
Cut the ends off the watermelon, making a flat surface on the top and bottom. Place watermelon flat side down on a plate and cut off the rind and discard. Gently pat dry with a paper towel. In a medium bowl, combine the yogurt and Cool Whip until well blended. Frost the watermelon like you would a regular cake and decorate the top with the Blackberries and Raspberries.
Cooks Notes: I laid my watermelon on its side and cut it in half to make 2 smaller cakes.
